Couple of things I’m curious about:
First one is can you enable the TV to watch while you are driving
How does the AV/TV socket work in the rear, i.e. is it independent or does it watch what’s on the dash screen. Also does this disappear when I’m driving? Is there a way to keep the signal?
If i was to buy an android screen (what is the proper name, OBC?) I’m sure i would be able to download Sky Go and tether it through my phone to watch SKY? Is there something that enhances the signal strength of the phone connection, either to 3 (my provider) or to the Android device.

I bought a tv on download off fleabay. It's illegal by the way (disclaimer).

gathered that it would be illegal, just be nice to have the SKY GO with a proper signal!

I had TV-in-motion on my E39 , there's 2 ways to do it depending on model .
Some cars can be changed using an Autologic computer like Indy's use .
The other is a special lead (which is what the E39 had)
Doesn't cost much , was about £60 if I remember , but might be cheaper these days .
I'm not sure about the AV socket in back , mine doesn't have that . But the AUX option available
on the front OBC screen there is a lead so you can attach i-products direct , cost me £13 off eBay .

by a bmw 1.4.0 scanner for £20 then you can enable tv in motion and have it incase anything else needs reading/ fixing

General consensus among those who have enabled TV in motion (I'm not one of them) was that reception on the move was pretty poor. This might have changed now that the switch over to digital is complete but if I were you I'd ask those who have done this on their (digital) on-board TVs first before spending any money on it.
Regarding the sockets and button in the rear: as far as I know the 'IN' socket is an Audio/Video input and if you plug a player in the signal plays on the main OBC screen when you select the input to 'AV' from the main OBC headunit. Special leads are available from toysinyourcar.com that might be useful if you want to hook up other screens...
Pushing the TV button advances the channel.

i had tv in motion enabled, tbh a wasted of time signal is poor at best, picture cant keep up with the movement, worked anywhere parked up,

Through on board receiver don't expect much from the tv. Another way is through an av interface so you can plug your phone in through or DVD player and watch through that way.
I use a Spec.dock with my iPhone and can watch pretty much anything.
