Roof should already work off the key, not one touch however. Did on our 330Cd vert.

To open roof: start with car locked, hold down the 'open' button on the key. Keeping it held down, the 4 windows will all drop, then a small pause. Then the roof will start to drop in the same way as it would do if you used the button in the car. You must keep the button pressed down through out from start to finish. To close using key: opposite to open

Just remember that once done, make sure you and the key in your pocket stay out of range of the car though. I looked out of my office window once to see the roof halfway open and all the windows down on our E46. Something in my pocket had been pressing the 'open' button on the key and even though the car was about 40m (but in line of sight) away the system worked.
Fortunately it was neither raining, nor a public car park!! SWMBO would have slaughtered me otherwise. I got an additional leather key cover to prevent it happening again though.

I had a similar issue with my powered boot! When I got the X5, I initially put mine and my wife's 3 series keys on the keyring with the buttons facing each other. Twice I went to leave the house in the morning to find the boot wide open

OMFG! Owned an E46 330ci vert for over 3 years and always wanted this function but thought this was a dealer unlock option. Just tried it and guess what.... roof opened from the key!!
I am so sure I have tried the exact same procedure before and the roof didn't budge! Maybe I just didn't keep the button pressed for long enough after the windows had dropped.
Anyway, thanks for the nudge!

No problem
it's a nice feature to have and even more important on the e93 vert ::)

Could be another daft question when you're inside opening/closing roof (e53) why do you have to keep your finger on button I thought it might be 1 touch

This German company sells a retro fit module that allows one touch roof opening for 79 Euro. Had one on my old E46 vert. Simple to fit too. They sell through eBay if interested.
