Old School Engine Tuning?

I've made a bit of a leap from a 2001 E46 to a 2012 F25.
Before that E46 I had a 1992 Clio and 1992 MR2 Turbo
The 90's cars particularly seem to have an endless supply of uprated parts from induction kits right through to uprated cams, manifolds, turbo's etc all right off the shelf. I spent thousands on that MR2!
I admit I haven't spent a huge amount of time looking, but it seems these days you're (we're) limited to a panel filter and a one size fits all map?
Or has anyone else done some serious tuning to the modern diesels?
