I've spent some time looking at this again this morning (wife in kitchen, cats killing the xmas deccies, no kids...) and everythng I can find on your problem is pointint to these cables probably being intended to go into a 13-pin DIN connector, hence the tiny cable sizes. The connectors for each monitor thrn go into a control box like a SAVV AVM-X5030F or AVM-X5050F which appears to be an AV Switcher and video amp.
This obviously comolicates matters a bit, and again there's no info on the web or on SAVV's web site. They do have a support contact address in the US ra@savv.com which might give you an option.
The wiring is therefore likely to have:
+12v - looks like the Red
+12v switched (power on only with ignition on - sometimes call 'ACC' for accessory.
0v - looks like the Black
Video +
Video Gnd (screen on whichever cable carries video).
Audio L -these monitors appear to have an IR headphone capability and the audio feeds may provide this too, or it might come up its own connector.
Audio R - see above.
Audio Gnd (again this should be screen and both may be tied together as a single screen)
Remote out to switcher - carries signal from remote contol system down to the switcher unit?
