I have a 4.4, so suspect the same engine bay layout. You'll need to remove the coolant header tank, the power steering fluid reservoir and oil filter housing. I had a pig of an ABS fault on my E39, and had to resort to buying myself a portable oscilloscope so I could read the output of the sensors whilst driving. Does that sound a bit scary for your skills?

Next time it fails to start, shift into Neutral and try again. Have a Shogun that does this. If it now fires up then the shift sensor needs adjusting.  Or keep starting in Neutral!

I have the ABS / DSC lights on, so plugged in INPA to see what's up. Pressure sender interference triggered 248 times, and steering angle sensor once. I'm guessing there's a pressure issue! To follow up now I've fixed it... Along the lines of the post above: No problems with supply to unit and washer pump still worked, so figured it was an issue within the unit. Removed it and dismantled, to find a build up of crud around the bushes / motor commutator. A squirt of cleaner and polish up ...

Rear wiper stopped wiping.

Half way through a journey the rear wiper stopped wiping. Luckily it is parked is the right place. The washer still works.

Any clues where to look first?

Well I went ahead and fitted the 88 degree stat, and two weeks on its a much more pleasant beastie. No hot smell, no constant worry about the impact of that heat and pressure on the cooling system. No idea why BMW decided it should run at 110, but I've certainly not seen any downsides to running it ...

Really interesting info there. The needle has sat dead centre throughout, and it's only because in the Dynavin & 'secret' menu I can tell the actual temp. It sits firmly at 110 and doesn't creep any higher, which correlates with you saying it should run at that temp. Saying that it does smell hot ...
